Pan Fried New Potatoes with Sausages

This is a quick and easy meal to make, and will taste delicious. Buy some decent sausages though, my favourite our Co-op sweet chilli.

Ingredients (serves 1-2)

  • Tin of new potatoes
  • Sausages (around 2-3 per person)
  • 1 onion
  • A handful of frozen peppers, or half a chopped pepper.
  • A handful of frozen runner beans, or about 5-10 chopped runner beans.
  • About 2-3  inches of courgette chopped into small chunks
  • Olive oil, or flavoured oil.
  • Garlic or garlic paste.
  • 2-3 blocks of frozen spinach
  • 4-5 mushrooms chopped up.


Put the sausages in the oven for the time stated on the back of the pack, usually around 20-30 mins. Once this time is nearly up put a fairly generous amount of oil in a pan and put on a low heat. Drain the potatoes and chop them all in half and add them to the pan. Chop an onion, and then add it along with the frozen peppers, runner beans, frozen spinach, mushrooms and chopped courgette. Add a bit more oil if the pan is getting a bit dry. If things are sticking to the bottom of the pan add a small tablespoon of balsamic vinegar. If you have any flavoured oil this can make it taste much nicer, I had some artichoke flavoured oil for example. Add some of the garlic paste and stir it all in and all to fry on a low heat. I sometimes add a small amount of soy sauce to season, as well as a dash of salt and pepper.

When the sausages are done, take them out of the oven and chop them up into small chunks, you should get around 4 chunks per sausage. Add these to the pan and turn up the heat. Fry until the sausages are slightly brown and crispy.

Then just serve!

The vegetables can easily be interchanged if you dislike them, just experiment!
