The Essential Student Cooking Guide (Honey and Mustard Chicken)

Honey and Mustard Chicken is another one of my favourite student recipes. It doesn’t take too long to cook either, and very little skill is required making it an excellent meal to carry out when your busy, suffering from a hangover or still in your first week of cooking! Ingredients
- 1 Chicken Breast
- 1-2 Tablespoons of Honey (Runny Honey or some Posh Scottish stuff!)
- 1-2 Teaspoons of Mustard (English or French)
- Potatoes or Rice
- Seasonal Vegetables.
Recipe
- First things first, lets make our honey and mustard marinade! Take your honey and mustard and put them in a bowl together, mix them around into a paste with a spoon. You can add a hint of BBQ seasoning here, it adds a certain grilled BBQ kick! It’s totally optional though!
- Once you’ve created the paste, take your chicken breast, clean it and create a series of slits down it with a knife so that the marinade can seep into the chicken.
- Then place the chicken into the marinade and gently rub it in ensuring the entire chicken is covered. You can leave it covered up with cling film in the marinade for up to an hour or so, but if you haven’t the time, don’t worry it will taste good already!
- You can now place it in the grill or oven for around 30-40 minutes. Ensure you turn it every 10 minutes if you put it in the grill!
- With about 15 minutes to go put your seasonal vegetables and rice or potatoes on the hob for cooking.
- Drain and place the vegetables and rice or potatoes on the plate, then get your chicken out. Slice it down the middle at the thickest point in the breast to ensure it is fully cooked. If so chop it up a bit more and eat!
Lunch Idea
Cooking a chicken breast in a marinade is a great way to create lunch for a couple days, once its cooked, chop it up into a small pieces and place them in a freezer bag in the fridge. You can now have chicken sandwiches for a few days! This can also be done with BBQ chicken which I will talk about in a later post!
